Ingredients
1 cup of water
1 tablespoon shortening
1 teaspoon salt
1 teaspoon baking powder
2-3 cups all-purpose flour
1 medium chicken, whole
3/4 teaspoon salt
1/4 teaspoon black pepper
water, enough to boil and for broth
NOTE: You can add canned broth or water, and a chicken bouillon cube of more broth is needed.
How to make Homemade Chicken and Dumplin’s
Step 1: Boil for about an hour the chicken with 3/4 teaspoon salt and 1/4 teaspoon black pepper. When done, take the chicken out of the broth and remove the bones.
Step 2: To make the dough, place the salt, baking powder, shortening, a cup of water, and about 2 cups of flour in a mixing bowl. If desired, add a bit of yellow food colouring before adding in the flour.
Step 3: On a floured surface, roll the dough very thin. Cut into inch strips wide and 3-inches long. You can use parchment paper for rolling out the dough if desired. They work wonders!
Step 4: Into the boiling chicken broth, drop the strips of dough. Resume boiling for about 20 minutes, stirring occasionally. Add the deboned chicken back to the broth and season with extra salt and pepper to taste. If wanted, you can add a chicken bouillon cube or 1/4 tsp poultry seasoning to the broth.
