Herb Marinated Lamb Chops

My go-to for date nights! Easy Herb-Marinated Lamb Chops takes a heartbeat to make. Juicy, tender lamb chops marinated in garlic and herb marinade and baked to perfection. Anyone can pull this off!

Ingredients

6 lamb chops, rib chops

Salt and pepper to season

2 tablespoons extra virgin olive oil to fry

Marinade:

1 tablespoon fresh thyme, finely chopped

1 tablespoon dried oregano, Greek oregano preferably

1 tablespoon fresh rosemary, finely chopped

½ tablespoon fresh mint, finely chopped

2 garlic cloves, minced

4 tablespoons extra virgin olive oil

lemon wedges to serve

How to make Herb Marinated Lamb Chops

Step 1: Season each chop with coarse salt and freshly ground pepper.

Step 2: In a small mixing bowl, add the oregano, rosemary, garlic, mint, thyme, and olive oil. Stir until well mixed.

Step 3: Rub the lamb with the marinade. Make sure to massage the lamb, then allow it to sit at room temperature for about 20 minutes.

Step 4: Place a large skillet over the stove and turn the heat to high.

Step 5: Add olive oil and allow it to become very hot.

Step 6: Turn down the heat to about medium-high, then add the marinated chops. Sear each side for 3 minutes or until an instant-read thermometer reads 135 degrees F or 57 degrees C.

Step 7: Place the chops on a clean plate and allow them to rest for about 5 minutes.

Step 8: Serve with your favourite side dishes. Enjoy!

Notes:

You can cook these chops on the grill.

Preheat the grill to medium heat, then grill the chops for about 3 to 4 minutes on each side.

Remove from the grill and allow them to rest for 5 minutes before serving.
