HERB MARINATED LAMB CHOPS

Valentine’s day is just a few days ahead. I am surprising my husband with a simple and romantic dinner date. I will cook our favourite herb-marinated lamb chops and serve these with roasted veggies.

The juicy and incredibly flavorful lamb chops are super irresistible. A mouthwatering, restaurant-quality dish that you can easily make at home. No one will believe that you make this with less effort and fast! The secret to success is the simple garlic and herb marinade. Enjoy a stunning meal with these amazing herb-marinated lamb chops. Ingredients

6 lamb chops, rib chops

2 tbsp extra virgin olive oil to fry

Salt and pepper to season

Marinade:

½ tbsp fresh mint, finely chopped

4 tbsp extra virgin olive oil

2 garlic cloves, minced

1 tbsp fresh rosemary, finely chopped

1 tbsp fresh thyme, finely chopped

lemon wedges to serve

1 tbsp dried oregano, Greek oregano preferably

TO MAKE HERB-MARINATED LAMB CHOPS

Step 1: Liberally season the lamb chops with coarse salt and freshly ground pepper.

Step 2: To make the marinade, place the thyme, oregano, rosemary, mint, garlic, and olive oil in a small bowl. Mix well until combined.

Step 3: Massage the marinade on the whole lamb. Marinate the lamb for up to 20 minutes at room temperature.

Step 4: Heat the oil in a large skillet over high heat. Once the oil is hot, adjust the heat to medium-high heat. Add the chops and sear for approximately 3 minutes until well browned, and the internal temperature of the chops is about 135 degrees F or 57 degrees C for medium-rare. Flip the chops and cook the other side for an additional 3 to 5 minutes.

Step 5: Transfer the cooked chops to a warm plate when done and let them rest for at least 5 minutes.

Step 6: Serve the lamb chops garnished with lemon wedges. Enjoy the lambs with your favourite side dishes.
