Herb Marinated Lamb Chops

This exciting dish is not only perfect for a weeknight dinner, but it’s fancy enough for date nights as well! Super easy to whip up and ready in no time. Enjoy the juicy, tender lamb chops in a simple garlic and herb marinade with a simple side salad to go with it.

Ingredients

2 tablespoons extra virgin olive oil to fry

6 lamb chops, rib chops

Salt and pepper to season

Marinade:

4 tablespoons extra virgin olive oil

1 tablespoon fresh thyme, finely chopped

2 garlic cloves, minced

½ tablespoon fresh mint, finely chopped

1 tablespoon fresh rosemary, finely chopped

1 tablespoon dried oregano, Greek oregano preferably

lemon wedges to serve

How to make Herb Marinated Lamb Chops

Step 1: Generously sprinkle the chops with coarse salt and freshly ground pepper.

Step 2: In a small bowl, whisk the thyme, oregano, rosemary, mint, garlic, and olive oil to make the marinade.

Step 3: On the entire lamb, massage the marinade. Leave the lamb to marinate at room temperature for up to 20 minutes.

Step 4: Preheat a large skillet over high heat for about 30 seconds. Add the oil and heat it until it easily slides around the skillet.

Step 5: Decrease the heat to medium-high, add the chops, then sear for about 3 minutes until the first side are well browned. For medium-rare, the internal temperature of the chops should be around 57 degrees C or 135 degrees F.

Step 6: Now, turn the chops on the other side and continue to cook for 3 to 5 minutes more. Note that the cooking time of the chops varies depending on the thickness of the meat.

Step 7: To a warm plate, transfer the cooked chops and allow them to rest for at least 5 minutes to let the proteins settle or maximum juiciness.

Step 8: When ready, serve the lamb chops with some lemon wedges on the side and your favourite side dish such as a green salad. Enjoy!

Notes:

To cook the BBQ: Prepare the grill (barbecue). Preheat it to medium heat for direct cooking. Place the chops on the grill and cook for about 3 to 4 minutes on each side until s little charred. Make sure to keep the lid close. When done, allow the chops to rest for at least 5 minutes before serving.
