Marinated in a simple garlic and herb marinade, these juicy, succulent lamb chops are the perfect meal for any occasion, even date nights alongside your favourite side dish.
Ingredients
6 lamb chops, rib chops
Salt and pepper to season
2 tablespoons extra virgin olive oil to fry
Marinade:
1 tablespoon fresh thyme, finely chopped
1 tablespoon dried oregano, Greek oregano preferably
1 tablespoon fresh rosemary, finely chopped
½ tablespoon fresh mint, finely chopped
2 garlic cloves, minced
4 tablespoon extra virgin olive oil
lemon wedges to serve
How to make Herb Marinated Lamb Chops
Step 1: Liberally season the chops with coarse salt and freshly ground pepper.
Step 2: In a small bowl, combine the thyme, oregano, rosemary, mint, garlic, and olive oil to make the marinade.
Step 3: On the entire lamb, rub the marinade and leave it for at least 20 minutes at room temperature.
Step 4: Over high heat, heat a large skillet for 30 seconds, then add in the olive oil.
Step 5: Adjust the heat to medium-high. Add the chops and sear for about 3 minutes until brown and the chops internal temperature reached 57 degrees C or 135 degrees F for medium-rare.
Step 6: Turn the chops over and cook the other side for 3 to 5 minutes more. The cooking time varies depending on the thickness of the chops.
Step 7: To a warm plate, transfer the cooked chops and let them rest for at least 5 minutes to let the proteins in the meat and for maximum juiciness.
Step 8: Garnish with lemon wedges and enjoy alongside a green salad or your favourite side dishes.

Step 1: preheat the grill to medium heat for direct cooking.
Step 2: Grill the chops while keeping the lid close for about 3 to 4 minutes on each side until a bit charred.
Step 3: When done, allow the chops to rest for at least 5 minutes before serving.
Step 4: Garnish with lemon wedges. Enjoy!
