Herb Coated Salmon in Puff Pastry:
4 (6-8 oz) salmon fillets, skinless
2 sheets puff pastry
2 c frozen spinach, thawed and squeezed to remove excess water
Egg for egg wash
Sauce:
2 tbsp Dijon
2 tbsp mayonnaise
1/2 lemon, juiced
2 tsp honey
2 tbsp chives, chopped
3 tbsp dill, chopped
3 tbsp parsley, chopped
2 tbsp tarragon, chopped
How to make Herb Coated Salmon in Puff Pastry
Herb Coated Salmon in Puff Pastry:
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Roll out and cut each puff pastry in half.
Step 3: On each puff pastry rectangle, add one salmon fillet.
Step 4: Spread the sauce over each salmon and top with around half a cup of spinach.
Step 5: Around the edges of the sheets, brush with egg wash and fold over the sides.
Step 6: Use the remaining egg wash to brush the top of the puff pastry.
Step 7: And transfer on a baking sheet, fold side down.
Step 8: Place inside the preheated oven and bake for about 20 to 22 minutes or until the pastry is puffed and golden.
To make the Sauce:
Step 9: Combine the sauce ingredients; Dijon, mayonnaise, lemon juice, honey, chopped chives, dill, parsley, and tarragon in a bowl.
