HEALTHY SAVORY KETO BREAKFAST COOKIES – LOW CARB, GLUTEN FREE

These are amazing breakfast cookies with only 2.9g net carbs per piece. Healthy, keto, low carb, gluten-free, and savoury biscuits. Freezes well and has a perfect quick breakfast or lunch on the go. Just pop in the microwave and eat! These tasty cookies are a fusion of omelette and biscuit rolled into one! Incredibly easy to whip up using only a few simple ingredients. These freezable guilt-free cookies are a must and surely a keeper!

INGREDIENTS

4 ounces pork sausage

1/2 c. onion, chopped

1/2 c. green peppers, chopped

3/4 c. almond flour

1/2 tsp salt

1/2 tsp pepper

1 tsp baking powder

3 Eggs

1 c. cheddar cheese, shredded

HOW TO MAKE HEALTHY SAVORY KETO BREAKFAST COOKIES – LOW CARB, GLUTEN FREE

Step 1: Prepare the oven. Preheat it to 375 degrees. And using parchment paper or silicone mat, tent a baking sheet.

Step 2: Cook the sausage with onions and peppers until the sausage has browned and the veggies are soft. Remove from heat and allow to cool.

Step 3: Meanwhile, whisk the almond flour with salt, pepper, and baking powder in a bowl until combined.

Step 4: In another bowl, place the eggs. After beating the eggs, add half a cup of the cheese. Add this to the flour mixture and mix well until incorporated. Then, add the cooled sausage mixture and mix.

Step 5: Onto the prepared baking sheet, place big spoonfuls of the mixture. Note that the dough is sticky, so using a spoon as much as you can is recommended.

Step 6: Flatten each cookie a bit by gently pressing the spoon over, then sprinkle with the rest of the cheese. Place in the preheated oven and bake for about 8 to 10 minutes.

Step 7: When done, remove from the oven. Cool and store in the fridge or freezer.
