1 c long-grain white rice
1/4 tsp red pepper flakes (optional)
1 14.5-ounces can of beef broth
1/2 tsp garlic powder
1 lb. lean ground beef
1 tsp salt
1 1/2 c finely diced celery
1 10.5-ounces can of cream of celery soup
1/2 tsp pepper
1 medium onion, finely diced
Directions:
Prepare the oven and preheat it to 175 degrees C or 350 degrees F.
Place a skillet on the stove and turn the heat to medium. Add the ground beef, then cook for a few minutes until crumbly and brown.
Add the garlic, then sauté for about a minute or just until aromatic. Sprinkle salt and pepper to season.
Add celery, red pepper flakes, and onion. Sauté for a few minutes until soft.
Apply cooking spray to the inside of a 1.5-quart casserole dish. Add soup and broth into a mixing bowl, then stir until well blended.
Pour the soup mixture into the skillet together with the rice. Stir everything until well incorporated. Transfer everything to the prepared casserole dish and cover it with foil.
Place the casserole in the preheated oven and bake for about an hour.
Remove from the oven and let it rest for at least 15 minutes. Make sure not to remove the cover.
Sprinkle freshly chopped green onions on top to garnish.
Serve warm. Enjoy!
Notes:
You can use any type of cream soup for this recipe.
Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.
