And since this is made in a single skillet, the children will not be fighting who will do the dishes tonight! 1 pound ground beef
1/2 onion, diced
3 cloves garlic, minced
1/2 c. green bell pepper
1/2 c. red bell pepper
14.5 ounces diced tomatoes
3/4 c. white rice, I use Jasmine
2 c. beef broth
2 tablespoons tomato paste
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 c. cheese
1 tablespoon parsley
How to make Ground Beef Stuffed Pepper Skillet
Step 1: In a skillet, brown the ground beef with the onion over medium heat until the ground beef is completely cooked, crumbling the meat as it cooks until no longer pink. When done, drain the excess grease and discard.
Step 2: In the same skillet with the cooked ground beef and onion, add the bell peppers, diced tomatoes, rice, beef broth, tomato paste, Italian seasoning, salt, and pepper. Stir and bring to a boil, then decrease the heat to a simmer. Put the lid on and continue to cook for additional 18 minutes until the rice is cooked through.
Step 3: Using a fork, fluff the rice, then top with shredded cheese. Replace the lid and allow the cheese to melt over low heat.
Step 4: Serve when done garnished with some fresh parsley. Enjoy!
