Green Pepper Steak

Prep Time: 40 mins | Cook Time: 20 mins | Total Time: 1hr | Servings: 6

Easy dinner idea, vibrant, and flavorful Green Pepper Steak with tomatoes and onions. Enjoy this mouthwatering dish over rice for a complete dinner meal.

Ingredients

1 lb sirloin or round steak, sliced thin against the grain

¼ c soy sauce

1 tbsp granulated sugar

2 tbsp cornstarch

1 c low-sodium beef broth

4 tbsp vegetable oil, divided

2 large bell peppers, cubed (red, green, or both)

1 large onion, sliced into wedges

1 tsp fresh ground black pepper

3 cloves garlic, minced

1 tbsp fresh ginger, minced or grated

¼ tsp crushed red pepper flakes (optional)

2 large tomatoes, cubed (or several small)

Cooked rice for serving

Soy sauce for serving

How to make Green Pepper Steak

Step 1: Over the sliced steak, pour 2 tbsp soy sauce and sugar. Marinate the steak for at least 30 minutes or up to 4 hours.

Step 2: Mix the cornstarch, beef broth, the rest of the 2 tbsp soy sauce in a small bowl or 2 cup measure until well incorporated and set aside.

Step 3: In a large skillet, heat a tbsp vegetable oil over medium-high heat.

Step 4: Once the oil is hot, sear the beef until the edges are browned. Flip and remain cooking for another 2 minutes.

Step 5: Transfer the seared beef to a plate and do the same for the rest of the meat. Adding more tbsp of oil as needed.

Step 6: Add the last tbsp of oil into the pan and saute the bell pepper, onions, and black pepper for about 5 to 8 minutes or until the veggies are crisp-tender and a bit charred.

Step 7: Adjust the heat to medium and add the garlic, ginger, and if using the crushed red pepper flakes into the pan. Saute for a minute more or until the garlic is aromatic.

Step 8: Add back the cooked beef into the pan along with the juices. Pour in the beef broth mixture and cook for another 3 to 5 minutes or until the sauce is thick.

Step 9: Carefully fold in the tomatoes and gently stir to coat.

Step 10: Before serving, garnish with extra black pepper and parsley and serve immediately over hot cooked rice and more soy sauce. Enjoy!
