Ingredients
Meatloaf:
1 medium-sized onion (diced)
2 cloves garlic (minced)
1 tbsp butter
2 lbs ground beef
1 large Egg
1 c. panko bread crumbs
1 c. milk
1 tbsp Worcestershire sauce
1 tsp thyme
1 tsp kosher salt
Topping:
½ c. ketchup
1 tbsp brown sugar
1 tbsp spicy brown mustard
How to make Granny’s Classic Meatloaf
Step 1: Ready the oven or grill. Preheat it to 350 degrees F.
Step 2: With parchment paper, line a baking sheet for easy cleanup.
Step 3: In a saute pan, melt the butter over medium heat. Once the butter has melted, add the onions and cook for about 3 to 5 minutes, stirring occasionally until aromatic and a bit brown. Adjust the heat to low, then add the garlic, and cook for another 2 to 3 minutes. Take away from the heat and set aside to cool.
Step 4: Combine the ground beef, egg, bread crumbs, milk, Worcestershire sauce, thyme, salt, and cooked onions and garlic in a large bowl. Mix well with your hands, making sure not to overwork the meat. On a parchment-lined baking sheet, transfer the mixture and shape into a loaf. Cut a criss-cross pattern on top with a sharp knife.
Step 5: Place inside the preheated oven and bake for about 40 minutes, uncovered.
Step 6: In the meantime, mix the ketchup with mustard and brown sugar in a bowl, then set aside.
Step 7: Over the top of the meatloaf, spread the ketchup mixture after 40 minutes of cooking. Bake for another 30 to 35 minutes until the internal temperature of the loaf reached 160 degrees F or 70 degrees C.
Notes:
Make sure to mix the tissue until just combined.
Feel free to double the ketchup topping recipe!
You can make your meatloaf flat if you prefer a crunchy outer layer. Remember that this will also reduce the cooking time.
To verify the meatloaf is done, always use a trusted thermometer.
