Moist and creamy cake to end any dinner or buffet meal with a bang! This is a great recipe, easy to make with simple to understand steps, and calls for only pantry staple ingredients. A nostalgic cake that brings back great memories.
I was so excited when I found this recipe. I had to try this immediately. And I can say that this did not disappoint. I grew up with my grandmother and her favourite dessert happened to be oatmeal cake. If she’s still here right now, I know she’ll be proud!

Ingredients
CAKE:
1 cup quick oatmeal
1 1/2 cups boiling water
1 cup granulated sugar
1 cup brown sugar
1/2 c
oleo (butter or margarine)
2 medium Eggs
1 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
2 tablespoons soft oleo (butter)
1 cup brown sugar
1/2 cup milk or cream
1 teaspoon vanilla extract
3/4 cup flaked coconut
3/4 cup chopped pecans
How to make Grandma’s Oatmeal Cake
Step 1: Stir the oatmeal in the boiling water until all the lumps are gone. Let the oatmeal cook in the fridge. If you have any leftover oatmeal, bring it to room temperature, and use it.
Step 2: In a mixing bowl, add the sugars, oleo, and eggs. Beat until combined before adding in the flour, cinnamon, soda, and salt. Mix again. Add in the cooled oatmeal and mix until incorporated.
Step 3: pour the batter into a greased 9 x 13-inch cake pan.
Step 4: Place in a 350 degrees oven and bake for about 40 to 50 minutes.
To make the Frosting:
Step 1: Combine the butter, sugar, and milk in a small saucepan. Heat until boiling, then remove from heat and stir in the vanilla, coconut, and pecans.
Step 2: While the cake is still warm, spread the frosting.
