A moist and creamy cake to wrap up your dinner meal. This easy Oatmeal Cake recipe is one of my favourites because it is simple to throw together and requires a few ingredients. A delightful cake that is perfect for anytime dessert, topped with flaked coconut and chopped pecans, this is heaven on a plate! Ingredients
CAKE:
1 cup quick oatmeal
1 1/2 cups boiling water
1 cup granulated sugar
1 cup brown sugar
1/2 cup oleo (butter or margarine)
2 medium Eggs
1 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
2 tablespoons soft oleo (butter)
1 cup brown sugar
1/2 cup milk or cream
1 teaspoon vanilla extract
3/4 cup flaked coconut
3/4 cup chopped pecans
How to make Grandma’s Oatmeal Cake
Step 1: Stir the oatmeal in boiling water until no lumps remain. Place in the fridge to cool. Or feel free to use leftover oatmeal at room temperature.
Step 2: Beat the sugars, oleo, and eggs until combine. Add in the flour, cinnamon, soda, and salt. Beat well.
Step 3: Take the cooled oatmeal out of the fridge and mix well with the sugar mixture.
Step 4: In a greased 9 x 13-inch cake pan, transfer the batter, then place inside a preheated 350 degrees oven. Bake for about 40 to 50 minutes.
To make the frosting:
Step 1: Combine the butter, sugar, and milk in a small saucepan. Bring this to a boil.
Step 2: Once heated through, remove from the heat and immediately stir in the vanilla, coconut, and pecans.
Step 3: Spread the frosting on a still-warm cake.
