Grandma’s Oatmeal Cake

Prep: 10 mins | Cook: 40 mins | Serves: one 9×13 inch cake

This Oatmeal Cake is a pretty moist and creamy dessert to wrap up dinner or any meal. Taste incredible, this lovely cake reminds me of my childhood and grandma serving this dessert every after a meal. And with a simple frosting that you can spread immediately after preparing it, this cake sure is not a fussy dessert, nor fancy but not short in flavour. Enjoy moist and tender crumb in every bite!

Ingredients

CAKE:

1 cup quick oatmeal

1 1/2 cups boiling water

1 cup granulated sugar

1 cup brown sugar

1/2 cup oleo (butter or margarine)

2 medium Eggs

1 1/2 cups flour

1 teaspoon cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

FROSTING:

2 tablespoons soft oleo (butter)

1 cup brown sugar

1/2 cup milk or cream

1 teaspoon vanilla extract

3/4 cup flaked coconut

3/4 cup chopped pecans

How to make Grandma’s Oatmeal Cake

Step 1: In a bowl, add the boiling water and oatmeal. Stir until no lumps remain, then place in the fridge to cool. For this recipe, you can use leftover oatmeal at room temperature.

Step 2: In another bowl, place the sugars, oleo, and eggs. Beat well before adding in the flour, cinnamon, soda, and salt. Mix well until incorporated. Then, add this to the cooled oatmeal and mix well.

Step 3: Transfer the batter to the greased 9 x 13-inch cake pan.

Step 4: Place inside the oven and bake for about 40 to 50 minutes at 350 degrees.

To prepare the Frosting:

Step 1: Combine the butter, sugar, and milk in a small saucepan. Bring the mixture to a boil, then remove from the heat.

Step 2: Stir in the vanilla, coconut, and pecans.

Step 3: Spread the still warm frosting on the cake.
