Goulash with Smoked Sausage

This Goulash with smoked sausage is crazy good, I’m pretty sure this is on its way to everyone’s heart! It’s hearty and incredibly delicious, not to mention easy and a breeze to make. Create a slightly different stew with this simple recipe and enjoy a superb, mouthwatering result that even the pickiest eaters will dig!

Ingredients

2 tbsp butter

1.5 to 2 lbs medium-size red skin potatoes peeled and sliced into ½-inch thick circles (about 2 ¾ pounds)

1 onion thinly sliced

1 tbsp Olive oil

14-16 oz. smoked sausage sliced

3 garlic cloves minced or pressed through a garlic press

1 ½ tsp paprika

⅓ c. parsley chopped

1 ½ c. chicken stock

Salt to taste

¾ tsp freshly cracked black pepper

How to make Goulash with Smoked Sausage

Step 1: In a large deep skillet, heat 1 tbsp oil. Add the smoked sausage medallions once the oil is hot and cook for a couple of minutes until deep brown colour. Set the sausage aside when done.

Step 2: Add the butter to the same pan and let it melt. Once the butter has melted, add the onions and cook for about 5 to 7 minutes until caramelized. Add the garlic with a couple of pinches of salt, freshly cracked black pepper, and paprika. Stir and cook for additional 2 minutes.

Step 3: To the pan, add the sliced potatoes, chicken stock, and parsley. Stir, then put the lid on. Simmer everything for about 15 minutes over medium-low heat. Remove the cover and let the potatoes simmer for additional 10 minutes or until tender and the sauce has slightly thickened. Stir about once or twice as it cooks.

Step 4: To the pan, add the smoked sausage with a few more pinches of salt and pepper as needed. Remove from the heat when done and serve the Goulash hot. Enjoy!
