Goat Cheese Stuffed Bacon Wrapped Dates with Rosemary Honey

This is my new favourite holiday appetizer! It’s easy and quick with the perfect amount of sweet and savory flavor and a hint of spice. These dates are baked until crisp and caramelized. These candied dates are amazingly good, super addictive, and the perfect appetizer for entertaining!

Ingredients

12 slices thinly sliced bacon, cut in half

6 oz. creamy goat cheese

1/3 c. honey

24 plump Medjool dates

1/2 tsp cayenne pepper using more or less to taste

1 tbsp chopped fresh rosemary

candied or toasted walnuts (optional)

kosher salt and black pepper

How to make Goat Cheese Stuffed Bacon Wrapped Dates with Rosemary Honey

Step 1: Prepare the oven. Preheat it to 400 degrees F. Using parchment paper, line a baking sheet.

Step 2: In half lengthwise, split the dates, but do not cut it all the way through. Discard the pit. With goat cheese, stuff each date, then squeeze it gently to seal. Wrap the dates with bacon and put them on the prepared baking sheet, seam-side down. Do the same for the rest of the dates.

Step 3: Combine the honey, rosemary, cayenne, salt, and pepper in a small bowl. Over the dates, evenly drizzle half this honey mixture, coating the bacon.

Step 4: Place in the preheated oven and bake for about 20 to 25 minutes or until the bacon is crispy.

Step 5: Remove from the oven when done and serve warm or room temperature with the rest of the honey and walnuts. Enjoy!

Notes:

You can make the dates in advance. Simply assemble it and keep it in the fridge for up to 1 day. Before baking, drizzle the dates with honey and bake.

If you want to make this vegetarian, leave the bacon out and just roast the goat cheese stuffed dates with honey. To serve, sprinkle with flaky sea salt. Enjoy!
