Giant Cheesecake Stuffed Cookie

This dessert will melt your heart. A certified show-stealer and perfect with a dollop of whipped cream or a scoop of vanilla ice cream on top. This massive dessert will turn every head. And what’s amazing is this is something you can easily whip up with simple ingredients that you might already have on hand. Creamy cheesecake, chewy cookie, and melty chocolate chips, what not to love about this Giant Cheesecake Stuffed Cookie?

INGREDIENTS

CHEESECAKE FILLING:

1 1/2 (8-ounces) blocks cream cheese, softened

1/2 cup powdered sugar

Pinch kosher salt

COOKIE:

Cooking spray

1 1/4 cup (2 1/2 sticks) butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

2 teaspoons pure vanilla extract

2 large Eggs

2 3/4 cups all-purpose flour

1 teaspoon baking soda

3/4 teaspoon kosher salt

2 cups chocolate chips

How to make Giant Cheesecake Stuffed Cookie

Step 1: Prepare the oven. Preheat it to 350 degrees. Using cooking spray, grease a 10-inch cast-iron skillet.

Step 2: In a medium bowl, place the cream cheese, powdered sugar, and salt. Mix to make the cheesecake filling.

Step 3: For the cookie dough: Beat the butter and sugars using an electric mixer for about 2 minutes until light and fluffy. Gradually stir in the vanilla extract and eggs. Then, in a different bowl, combine the flour, baking soda, and salt. Add this into the butter-sugar mixture and mix well. Now, fold in the chocolate chips.

Step 4: Into the prepared skillet, scoop half of the cookie dough and smooth it in an even layer, raising the border to about half an inch. Into the middle of the cookie, spread the cheesecake filling in an even layer, making sure to leave around an inch uncovered space around the edge of the cookie. Now, top with the rest of the cookie dough. Place in the preheated oven and bake for about an hour and ten minutes until the toothpick inserted in the middle of the cookie comes out clean.
