All you could ever ask for is in this garlicky and cheesy Smashed Potatoes. Yes, it is “smashed” potatoes and not mashed potatoes. So what is the difference between the two? Well, your good old mashed potatoes after boiling until tender are mashed with milk and butter to a creamy consistency. While mashed potatoes get tossed with some olive oil and herbs and smash into thin patties and roasted until perfectly crispy. Sounds fun, right? And this is adaptable. The ingredients below are what I normally use but you can try bacon and cheddar, ranch seasoning, or BRIE. And as for the potatoes, you can use baby Yukon potatoes, red potatoes, even larger potatoes that are cut in half.

1 pound baby Yukon Gold potatoes
Kosher salt
4 tablespoons melted butter
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
Freshly ground black pepper
1/2 cup freshly grated Parmesan
How to make Garlic Smashed Potatoes
Step 1: Prepare the oven. Preheat it to 425 degrees.
Step 2: Place the potatoes in a large pot. Cover with water, then add a generous amount of salt.
Step 3: Bring to a boil, then simmer the potatoes for about 15 minutes until tender.
Step 4: When done, drain and let the potatoes cool.
Step 5: In melted butter, garlic, and thyme on a large rimmed baking sheet, toss the potatoes. Press the potatoes down using the bottom of a small glass or mason jar to smash them into flat patties.
Step 6: Season the potatoes with salt and pepper, then sprinkle with Parmesan.
Step 7: Place in the preheated oven and bake for about 25 minutes until the potatoes start to crisp and the Parmesan is golden.
