15 Minute Garlic Lime Cashew Zoodles

This fifteen minutes garlic, lime cashew zoodles is a great, easy and quick dinner option perfect for busy days. A healthy vegan dish that anyone can easily throw together in a snap at any time. This amazing dish is made with only minimal, simple ingredients that you might already have on hand. It’s a very addictive dish that even your fussiest eaters will enjoy!

These garlic, lime cashew zoodles are surprisingly filling. It’s great to serve by itself or as a simple side dish. The combination of cashew and peanut butter in the Asian-inspired sauce brings this dish to a whole new level! Just make sure to avoid overcooking this dish as this will end up a watery mess.

INGREDIENTS

2 large carrots peeled

2 medium zucchini

1 tbsp fresh cilantro, chopped

3/4 c. cashews

Sauce:

1/2 tbsp sriracha sauce (or add more if you like it spicy)

2 heaping tablespoons peanut butter

Juice of 1/2 lime

1/2 tbsp hoisin sauce

2 cloves garlic, minced

1 tsp soy sauce

How to make 15 Minute Garlic Lime Cashew Zoodles

Step 1: On the thinnest setting, spiralize the carrots, then the zucchini on the medium setting. Set both aside.

Step 2: To a skillet, add the peanut butter, hoisin sauce, sriracha sauce, soy sauce, lime juice, and garlic. Cook over medium-high heat for about 2 minutes, stirring constantly, until the garlic has just begun to cook.

Step 3: Then, add the cashews along with the zucchini and carrots. Gently toss using tongs or two large spoons every 10 to 20 seconds for about 4 to 5 minutes or until everything is lightly coated and heated through. Stir in the cilantro when the dish is almost ready.

Step 4: Serve the garlic, lime cashew zoodles right away. Enjoy!

NOTE:

Make sure not to overcook this dish to prevent it from getting watery.
