GARLIC BUTTER MUSHROOMS & ONIONS

Prep Time: 10 mins | Cook Time: 15 mins | Total Time: 25 mins | Servings: 6

So good you’ll dig straight in! This lovely vegetarian dish is perfect to share with everyone.

INGREDIENTS

16 oz (454 grams) small button mushrooms

2 tbsp (30 ml) olive oil

4 cloves (4 cloves) garlic, chopped or crushed

1 medium onion, minced

1/2 c (120 ml) chicken stock or white wine

Zest from 1 medium lemon

1 tbsp (15 ml) lemon juice

1/2 tsp (2.5 ml) chilli flakes, or taste

4 tbsp (60 ml) butter, divided

2 tbsp (30 ml) chopped parsley

kosher salt or sea salt, to taste

fresh cracked black pepper, to taste

HOW TO MAKE GARLIC BUTTER MUSHROOMS & ONIONS

Step 1: Clean the mushrooms, brush, then trim the bottoms of the stems if the mushrooms dried out. Keep them whole or cut in half if they are large.

Step 2: Drizzle olive oil in a heated large skillet. Add the mushrooms and cook over medium-high heat for about 3 to 5 minutes until they begin to brown and caramelized.

Step 3: Add and melt a little 2 tbsp butter to the skillet. Saute the onions and garlic for another 3 to 5 minutes until a bit caramelized and softened.

Step 4: Pour in the stock or wine followed by the lemon zest, lemon juice, and chilli flakes. Cook for 2 minutes more or until the liquid decreases a little.

Step 5: Add the rest of the 2 tbsp butter and chopped parsley to the skillet and continue to cook for another minute.

Step 6: Season the Garlic Butter Mushrooms and Onions with salt and pepper, then serve immediately.
