Amazingly flavorful chicken bites that pair so well with just about anything! Easy and quick to throw together using only basic ingredients. So darn good, this quickly became our new favourite weeknight dinner rotation!
Ingredients
1 1/4 pounds boneless skinless chicken breasts, cut into 1 1/4” pieces
2 tablespoons all-purpose flour
1 1/2 teaspoons Italian seasoning
Salt and freshly ground black pepper
1 tablespoon olive oil
3 tablespoons unsalted butter, divided
1 1/2 tablespoons minced fresh garlic (4 cloves)
2 tablespoons finely chopped fresh parsley
How to make Garlic Butter Chicken Bites
Step 1: Over medium-high heat, preheat a 12-inch non-stick skillet.
Step 2: Meanwhile, pat dry the chicken using paper towels on all sides and sprinkle with flour, Italian seasoning, and your desired amount of salt and pepper, coating the chicken evenly.
Step 3: To the preheated skillet, add a tbsp each of olive oil and butter. Once the butter has melted, tilt the pan to coat evenly. In an even layer, add the chicken, making sure there is enough space between the pieces. Cook the first side for about 3 minutes until golden brown. Flip the chicken pieces and continue to cook the other side for 2 minutes more until almost cooked through/
Step 4: In small pieces, add the rest of the 2 tbsp butter along with the garlic and parsley and cook for another minute. The chicken should no longer be pink and the internal temperature reached 165 degrees.
Step 5: Enjoy immediately!
Notes:
Feel free to double up on the parsley if you like extra herb flavour. And finish everything off by juicing in half of a lemon.
I love serving this with lemon couscous for a quick meal. In a small saucepan, bring to a boil a can (14.5-ounces) of chicken broth and 2 tbsp each lemon & water. Then, add in a cup of couscous (not pearl) once the mixture is boiling and quickly remove from the heat. Allow this to sit for at least 5 minutes. Fluff, then serve!
You can also serve these Garlic Butter Chicken Bites with either sauteed or steamed veggies like squash, zucchini, asparagus, or broccoli.
