My ideal weeknight meal is those I can throw together easily and quickly using just simple ingredients. I have my favourites, and one of the best I love so much is this garlic butter chicken. Juicy chicken and fork-tender baby potatoes in a garlic butter sauce and loads of mozzarella.

1/2 c. unsalted butter (1 stick)
4 boneless skinless chicken breasts
I pound baby potatoes (if larger than one-inch slice in half)
4 cloves minced garlic
2 tsp dried parsley
1/4 tsp salt
1/4 tsp black pepper
1/2 c. shredded Italian blend
1 c. shredded mozzarella
1/2 tsp crushed red pepper (or less to taste)
HOW TO MAKE GARLIC BUTTER CHICKEN
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Sprinkle both sides of the chicken breasts with salt and pepper and place in a casserole dish in a single layer, then top with baby potatoes.
Step 3: Melt the butter in a large skillet over low heat. Once the butter has melted, add the garlic to the skillet and cook for about a minute or until aromatic. Set the garlic butter aside and let it cool for about 5 minutes before your pour it over the chicken and potatoes. Lastly, sprinkle with half each of the crushed pepper and dried parsley.
Step 4: Place in the preheated oven and bake for about 20 to 22 minutes or until the chicken is almost completely cooked. Remove from the oven and evenly top with the cheeses and the remaining crushed pepper and dried parsley. Return in the oven and resume baking for an additional 3 to 5 minutes or until the cheese has melted. To lightly brown the tops, set the oven to broil in the last minute of cooking.
NOTES:
I like spicy seasoning so I always add more crushed red pepper, but if feeding the kids or you are not into spicy things, you can just use less or swap it with rosemary or thyme.
Depending on your preference, you can use fewer or more cheese.
You can use bite-sized pieces of broccoli in place of baby potatoes. If desired, you can also cook a pot of angel hair pasta.
Feel free to use chicken thighs instead of chicken breasts.
