4 cloves garlic, minced
3 tbsp unsalted butter, divided
8 (5 oz.) bone-in, skin-on chicken thighs
¼ c. packed brown sugar
1 tbsp honey
¼ tsp dried thyme
½ tsp dried oregano
¼ tsp dried basil
salt and ground black pepper to taste
How to make Garlic-Brown Sugar Chicken Thighs
Step 1: Prepare the oven. Preheat it to 400 degrees F or 200 degrees C.
Step 2: Sprinkle the chicken thighs with salt and pepper.
Step 3: In a large oven-proof skillet, melt 2 tbsp butter over medium-high heat. Once the butter has melted, add the chicken, skin-side down. Sear for about 2 to 3 minutes on each side. To a plate, transfer the chicken when done.
Step 4: In the same skillet, melt the rest of 1 tbsp butter, stirring to loosen any browned bits on the bottom. Then, add the garlic and cook for about 30 seconds until aromatic. Next, add the brown sugar, honey, oregano, thyme, and basil. Stir well, then turn the heat off. Add the chicken back to the skillet, skin-side down.
Step 5: Transfer the skillet to the preheated oven and roast for about 25 to 40 minutes or until the chicken is no longer pink and the juices run clear. The chicken is done once the internal temperature of the chicken reaches 165 degrees F or 74 degrees C.
Step 6: Remove from the oven when done and serve right away. Drizzle the pan sauce over the chicken thighs. Enjoy!
Tips:
Note that the cooking time of bone-in chicken thighs takes longer to cook than boneless. To ensure they are done, check using an instant-read thermometer.
