Frittata (with Bacon Spinach Tomato and Swiss)

Breakfast is never this great until this Frittata loaded with bacon, spinach, tomato, and creamy Swiss cheese. The vibrant color with the incredible taste of this Frittata is everything I am looking for to rev up my day!

Ingredients

8 large eggs

8 ounces bacon, chopped (8 slices)

1/2 teaspoon onion powder

1/4 c. half and half

1/4 teaspoon garlic powder

1 c. grape tomatoes, halved

3 ounces fresh spinach, roughly chopped (3 packed c.)

2/3 c. (2.8 ounces) shredded Swiss cheese

Salt and freshly ground black pepper, to taste

How to Make a Frittata (with Bacon, Spinach, Tomato and Swiss)?

Step 1: Prepare the oven. Preheat it to 350 degrees. Grease a 9 – 10-inch deep pie dish and set aside.

Step 2: In a 12-inch nonstick skillet, lay the bacon and cook for about 6 to 10 minutes over medium-high heat, tossing often until browned and crispy.

Step 3: To a plate lined with paper towels, transfer the cooked bacon. Make sure to leave about 1 tbsp bacon grease in the skillet and discard the rest.

Step 4: On medium-high heat, return the skillet. Add the spinach and saute for about 15 to 30 seconds until wilted. On the plate with bacon, transfer the spinach.

Step 5: Place the eggs, half and half, onion powder, and garlic powder in a large mixing bowl. Mix well until blended, then season with salt and pepper.

Step 6: To the large mixing bowl, add the cooked bacon along with the tomatoes, spinach, and Swiss cheese. Mix well until combined, then pour everything into the prepared pie dish.

Step 7: Place in the preheated oven and bake for about 30 to 35 minutes or until the Frittata is set.

Step 8: Remove from the oven and cut the Frittata into wedges. Serve them warm. Enjoy!

Notes:

Do not over-season with salt as the bacon and cheese will add salt. You only need around 1/4 teaspoon salt.
