This is a simple recipe using fresh zucchini. Incredibly easy and quick to make using just pantry ingredients. Serve these fried zucchini hot with your favourite dipping sauce, and make sure to whip up a big batch because these go fast! A bonus, four tested sauce recipes below that pairs well with these tasty fried zucchinis.
Ingredients
2-3 small to medium-sized zucchini, sliced lengthwise in about 1/4
1 cup all-purpose flour
2 Eggs, beaten
1/4 cup milk
salt and pepper, to taste
1/2-inch olive oil, extra virgin in a skillet

How to make Fried Zucchini
Step 1: In a skillet, add enough olive oil to about half an inch deep and heat over medium-high.
Step 2: In about 1/4 inch strips, slice the zucchini lengthwise and season lightly with salt and pepper.
Step 3: In a bowl, add the eggs and milk. Whisk until incorporated.
Step 4: In a large bowl, combine the flour with a little amount of salt and pepper.
Step 5: In the egg and milk mixture, dip the zucchini, then dredge in flour. Before adding to the hot oil in the skillet, shake the excess flour. Make sure to add the zucchini slices one at a time. To check if the oil is hot, dip the handle of a wooden spoon or chopstick into the preheated oil. Once the oil begins bubbling steadily, the oil is hot enough for frying. But if it bubbles vigorously, ensures to let the oil cool for a bit.
Step 6: Once the bottom side of the zucchini is well browned, flip it to brown the other side. Transfer the zucchini on paper towels once they are golden brown on each side to drain the excess oil.
Step 7: Serve the fried zucchini along with your fave dipping sauce. Enjoy!
Dipping Sauces:
Hot Horsey Sauce: Mix half cup of mayonnaise with approximately 1 to 2 tbsp of prepared horseradish until well combined. You can use store-bought horseradish.
Horsey Ketchup Sauce: Whisk a half cup of your fave ketchup with 1 to 2 tbsp of freshly prepared horseradish until well mixed.
Ranch Dill Dip: Mix well about half a cup of ranch dressing with fresh diced dill.
Cucumber Ranch and Herb Dip: This is a combination of half cup ranch dressing, about 1/4 cup diced cucumber, 3-4 sprigs of diced cilantro, basil, and oregano.
