Ingredients

2 large eggs, whisked

4 c. cooked rice, long or short grain

1 tbsp butter

1/2 c. chopped onion

3-4 tbsp lite soy sauce

1/2 c. frozen peas

1/2 c. chopped carrots

1-2 tsp minced garlic

Optional: salt, pepper, and sesame oil, to taste

How to make Fried Rice

Step 1: Chill the cooked rice in the fridge until ready to use.

Step 2: In a large skillet or wok, melt the butter. Once the butter has melted, add the onion and carrots to the skillet/wok and cook for about 2 minutes. Then, add the garlic and peas. Stir until incorporated. Push everything to one side, then add the eggs to the skillet/wok. Scramble the egg, then mix everything.

Step 3: To the skillet/wok, gently stir in the cooked rice.

Step 4: Then, add the soy sauce and toss to coat. To taste, season with salt and pepper. If desired, add a dash or two of sesame oil.

Step 5: When done, serve the fried rice right away. Enjoy!

Notes:

Here are a few additions: if desired, you can add veggies to the fried rice such as mushrooms, chopped broccoli, and/or bell peppers.

For a complete meal, add your favourite protein like diced chicken, pork, steak, or shrimp.

Place the fried rice in an airtight container and store it in the fridge for up to 3 days. You can also freeze it for up to 1 month.

4 cups of cooked rice are equivalent to 1 1/4 cups of uncooked rice.
