French Onion Chicken Casserole

PREP TIME: 15 MINS | COOK TIME: 25 MINS | YIELD: 3 Servings

This is a very satisfying meal that is perfect for the entire family! The juicy and tender chicken is topped with caramelized onions and loads of melted cheese. It is a flavour-packed chicken dinner that pairs well with steamed vegetables or a simple side salad.

INGREDIENTS

2 tbsp unsalted butter

3 boneless, skinless chicken breasts (cut horizontally if they’re too thick)

5 large onions, thinly sliced

3 cloves garlic, minced

1 c. shredded mozzarella cheese (or Gruyere)

1/4 to 1/2 c. chicken broth

1 or 2 tsp garlic powder

1 tsp dried oregano

Fresh chopped parsley, for garnish

Red crushed chilli pepper flakes, optional

Pinch of salt and fresh cracked pepper

How to make French Onion Chicken Casserole

Step 1: Prepare the oven. Preheat it to 400 degrees F or 200 degrees C. Grease a 9 x 12-inch baking dish lightly and set aside.

Step 2: In a large skillet, melt the butter over medium-high heat. Once the butter has melted, add the onions to the skillet and sprinkle with salt and pepper. Cook for about 5 to 8 minutes until the onions have softened.

Step 3: Adjust the heat to medium and continue to cook the onions for another 15 minutes, stirring often, until caramelized. Then, pour in the broth and deglaze the pan.

Step 4: Now, add the fresh minced garlic. Stir and cook for about a minute until aromatic. Turn the heat off and slightly cool.

Step 5: Sprinkle the chicken breasts with oregano, crushed chilli pepper flakes, salt, pepper, and garlic powder. In the prepared baking dish, arrange the chicken. Over each chicken breast, sprinkle the shredded cheese. Place in the preheated oven and bake for about 20 to 25 minutes or until cooked through and the cheese is bubbly. To crisp up the cheese, broil for about 2 minutes.

Step 6: Remove from the oven when done and serve the casserole immediately garnished with some fresh chopped parsley. Enjoy with your favourite steamed veggies or cauliflower rice.
