Ingredients

2 tablespoons olive oil

3-4 slices deli-style Swiss cheese (depending on how many chicken breasts)

2 large white onions, sliced

1 14-ounces can beef broth

3-4 chicken breasts, pounded

1/4 c. (1/2 stick) salted butter

1 1/2 tablespoons all-purpose flour

1 teaspoon fresh thyme

3-4 slices deli-style provolone cheese (depending on how many chicken breasts)

parsley, for garnish

1 1/2 teaspoons salt

1 teaspoon ground black pepper

HOW TO MAKE FRENCH ONION CHICKEN

Step 1: In an oven-safe skillet, melt the butter over medium-high heat. Once the butter has melted, add the onions and saute for approximately 15 minutes until soft. When done, set the onions aside.

Step 2: Rub the olive oil on the entire chicken, then season with salt, pepper, and fresh thyme. In the same skillet, sear the chicken for approximately 5 minutes per side. When done, transfer the chicken to a plate and tent with a paper towel.

Step 3: Add the onions back to the skillet and sprinkle with flour. Stir and continue cooking for approximately a minute. Pour in the beef broth and whisk until the mixture has thickened.

Step 4: Return the chicken the to skillet and spoon the sauce over.

Step 5: Prepare the oven. Preheat it to 350 degrees.

Step 6: On top of the chicken, place a slice of provolone and Swiss cheese.

Step 7: Place the dish in the preheated oven and bake for about 8 to 10 minutes until the cheese has melted and the chicken is completely cooked.

Step 8: When done, remove the chicken from the oven, then spoon some of the sauce over. Serve hot garnished with parsley. Enjoy!
