Extra Crispy Oven-Fried Chicken Thighs

Enjoy extra crispy chicken without the grease and stack of calories and cholesterol with these easy oven-fried chicken thighs. These tastes exactly like your pan-fried or even deep-fried chicken, and breading is not involved either! Serve these thin, crackly, and exceedingly crispy oven-fried chicken with your favourite dipping sauce on the side or toss in Buffalo wings. Read on for the two approaches to get your desired result.

Ingredients

1 tablespoon BAKING POWDER (do NOT use baking soda, it’s NOT the same)

10 bone-in, skin-on chicken thighs (about 3 pounds, trimmed)

2 teaspoons sweet paprika

3 tablespoons Buffalo wing sauce (plus more to taste)

1 teaspoon black pepper

2 teaspoons kosher salt (plus more to taste)

How to make Extra Crispy Oven-Fried Chicken Thighs

Step 1: Prepare the oven. Preheat it to 450 degrees F.

Step 2: Using paper towels, dry the chicken thighs well, then sprinkle with salt, paprika, pepper, and baking powder. With your hands, gently rub the seasonings on the entire chicken.

Step 3: On a cooling rack, lay the chicken thighs, making sure to leave a bit of space between each piece. To minimize sticking, you can grease the cooking rack with PAM or oil.

Step 4: To a large baking sheet lined with aluminium foil and/or parchment paper, transfer the thighs. Place in the preheated oven. Turn the oven to 425 degrees F convection and bake the chicken thighs for about 30 minutes if you prefer moderate crispiness and supreme juiciness. For ultimate crispiness and fall-off-the-bone tenderness, bake the chicken thighs for about 35 to 40 minutes.

Step 5: When done, take the chicken thighs out of the oven and allow them to rest for about 5 minutes. Then, toss in Buffalo wings or your preferred sauce. Or serve these crispy oven-fried chicken thighs with a dipping sauce on the side. Enjoy!
