Egg Pie Recipe

This classic egg pie will never run out of style. Simple and easy to make from scratch. You can prep this either on a baking pan or pie dish or aluminium pan and be blown away by how delicious this pie is!

INGREDIENTS

Crust:

2 c. all-purpose flour

3 tablespoons sugar

½ teaspoon salt

¾ c. unsalted butter, cut into cubes and softened

¼ c. cold water

Filling:

1 c. evaporated milk

4 large Eggs and another 1 large egg with white and yolk separated

1 teaspoon vanilla extract

1 teaspoon fresh kalamansi or lemon juice

1 teaspoon condensed milk (14 ounces)

How to make Egg Pie

Crust:

Step 1: In a bowl, mix the flour, sugar, and salt. Add in the butter and thoroughly mix using a mixer.

Step 2: To the mixture, gradually pour in the cold water, mixing constantly until everything is incorporated.

Step 3: Make the dough into a large bowl and place it in the fridge for at least 30 minutes.

Step 4: Dust your working table with flour. Take the dough out of the fridge and place it on your working table. Using a rolling pin, flatten the dough into about half centimetre thickness and making it wide enough to cover a 9-inch pie dish/pan.

Step 5: On the baking pan or pie dish or aluminium pan, spread and press the flattened dough. Trim the dough using kitchen shears to about a half-inch overhang. Make sure to save the trimmings to use for covering up the thin areas of the crust.

Step 6: With a fork sheer the edges or use your fingers to pinch around the edges. Place the dough in the fridge for now.

Filling:

Step 1: Heat the evaporated milk in a microwave oven for a minute.

Step 2: In a mixing bowl, whisk 2 eggs but ensure to separate the egg yolk first. Gradually add in the condensed, whisking continuously. Add in the vanilla extract and lemon juice, whisking further until everything is well mixed.

Step 3: To the bowl, add the evaporated milk and mix well.

Step 4: Using an electric mixer, beat the egg whites until they form soft peaks.

Step 5: Into the mixture, fold the beaten egg.

Bake:

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Remove the pie crust from the fridge and pour the filling on it.

Step 3: Place in the preheated oven and bake for about 15 minutes. Then, adjust the oven temperature to 325 degrees F and bake for another 40 to 45 minutes until a toothpick inserted in the middle comes out clean.

Step 4: Once done, take the egg pie out of the oven and let it cool

Step 5: Enjoy this for dessert or snack with your favourite drink.
