INGREDIENTS
8 bone-in, skin-on chicken thighs
2 tbsp unsalted butter
2 tbsp chopped fresh cilantro leaves
1/4 c. peanuts, chopped
SAUCE:
2 tbsp reduced-sodium soy sauce
1/2 c. sweet chilli sauce
2 cloves garlic, minced
1 tbsp freshly grated ginger
1 tbsp fish sauce
1 tsp Sriracha, or more, to taste
Juice of 1 lime
HOW TO MAKE EASY THAI CHICKEN
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: In a small bowl, place the sauce ingredients (chilli sauce, soy sauce, garlic, fish sauce, ginger, lime juice, and Sriracha). Mix well until combined and set aside.
Step 3: In a large oven-proof skillet, melt the butter over medium-high heat. Once the butter has melted, add the chicken to the skillet, skin-side down. Cook for about 2 to 3 minutes on each side until golden brown. Pour the chilli sauce mixture over the chicken and stir.
Step 4: Transfer the skillet to the preheated oven and roast the chicken for about 25 to 30 minutes or until cooked through and the internal temperature of the chicken reached 165 degrees F.
Step 5: Then, set the oven to broil for about 2 to 3 minutes until the chicken is slightly charred and caramelized.
Step 6: Remove from the oven when done and serve the Thai Chicken right away. If desired, you can garnish the dish with peanuts and cilantro. Enjoy!
