If you love Mexican food like me, you’ll always find a way to make them every day! I am a fan of Taco Bell since I can remember. It’s the one place I can spend my whole day at. I already tried all of their menus and hoping they will soon make another. Staying at home during this pandemic makes me realize I am a pretty good cook, too. Lucky me. LOL! Cooking is so much fun! So, today, I want to share the very first Tex-Mex recipe I’ve made after forever! This Easy Tex Mex Casserole has easily become my family’s favourite meal. The insanely flavorful ground beef topped with cornbread is so addicting! The kids enjoyed every bit of this filling casserole!

1 green bell pepper, diced
1 lb ground beef
1 tsp ground cumin
1 medium onion, diced
1 (15.25 oz.) can corn, drained
1 c. salsa (for this recipe, I used a corn and black bean salsa)
1 (8 oz.) cornbread mix
1/2 tsp salt
How to make Easy Tex Mex Casserole
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Place the cook ground beef, onion, bell pepper, cumin, and salt in a skillet. Cook until the ground beef is completely cooked and the onions are clear.
Step 3: To the ground beef mixture, add the salsa and corn. Continue to cook for another 10 minutes, then pour this into a 9 x 9-inch casserole dish.
Step 4: Following the package directions, prepare the muffin mix. When done, spread this over the ground beef mixture.
Step 5: Place the dish in the preheated oven and bake for about 20 to 25 minutes or until the cornbread is golden on top and cooked through. When done, remove from the oven and serve right away. Enjoy!
