Easy Skillet Beef Pot Pie Recipe

This Pot Pie has been my go-to for an easy, quick, and family-friendly dinner. A scrumptious, comforting pie filled with vegetables in a simple homemade gravy and topped with biscuits. This savoury Easy Skillet Beef Pot Pie is a great dinner option that proves to be a huge hit always!

INGREDIENTS

1 lb ground beef

1 small onion, chopped

2-3 cloves garlic, minced

3 tbsp all-purpose flour

1/2 teaspoon pepper

1 teaspoon salt

1 c. milk (any type)

1 c. low sodium beef broth/stock

2 (15 ounces) cans mixed vegetables, drained

8 biscuits (homemade or store-bought)

1/2 tsp dried thyme (optional)

How to make Easy Skillet Beef Pot Pie

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Cook the ground beef with onion and garlic in a large oven-going skillet until brown. If needed, drain the excess grease, then sprinkle with flour and stir to mix. Add in the salt, pepper, milk, and broth. Stir well. Allow the mixture to simmer until the liquid has slightly thickened before stirring in the vegetables.

Step 3: On top, add the biscuits, and if desired sprinkle with thyme. Place in the preheated oven and bake for about 20 minutes until golden.

Tips:

For the topping, you can use whatever you prefer. A few great options are store-bought or homemade, canned biscuits, pie crust, crescent dough, or even puff pastry. And you don’t need to cut the biscuits, I just do so because it is more fun for the kids. If using pie crust, just lay one on top, slice a couple of slits on top to aid vent the air. Or if you plan on using crescent dough, break it up into triangles and arrange to overlap as needed on top.

You can use either canned or frozen mixed veggies. If using frozen, use 3 cups and just stir them in.

I like to use a cast-iron skillet but if not available, you can use any oven-going skillet or baking dish.
