Advanced Merry Christmas to you all! I made this amazing cake today because I kind of felt like the spirit of Christmas. It’s pretty weird but today, I woke up thinking that it’s Christmas! Anyway, give this a try and I promise it’ll be worth it! Enjoy!

1 (8 ounces) container candied mixed citrus peel
2 cups raisins
1 cup dried currants
1 cup dates, pitted and chopped
2 (2.25 ounce) packages blanched slivered almonds
1/2 cup brandy
1/2 cup all-purpose flour
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup butter
2 cups packed brown sugar
6 eggs
3/4 cup molasses
3/4 cup apple juice
How to make Easy & Quick Christmas Cake
Step 1: Add cherries, raisins, currants, dates, almonds, and citrus peel in a medium bowl. Mix until blended.
Step 2: Pour the brandy and stir until well-mixed.
Step 3: Let it sit for 2 hours or overnight to incorporate all the flavors.
Step 4: Coat 1/2 cup of flour the soaked fruit mixture.
Step 5: Ready the oven and preheat to 135 degrees C or 275 degrees F.
Step 6: Apply cooking spray in an 8×8-inch fruit cake pan. Line parchment paper on top and apply cooking spray on top of the parchment paper.
Step 7: Add baking soda, flour, cinnamon, allspice, cloves, and salt in a small bowl. Stir until well-mixed then set aside.
Step 8: Add butter in a large bowl and beat until light and creamy.
Step 9: Add eggs and brown sugar a little at a time while stirring.
Step 10: Add in the apple juice and molasses in a small bowl then stir until well-mixed.
Step 11: Transfer the apple juice mixture and the flour mixture into the butter mixture; add alternately. The ratio should be 4:dry and 3:liquid.
Step 12: Add in the floured fruit.
Step 13: Transfer the mixture into the greased pan.
Step 14: Place inside the preheated oven and bake for 3 to 3 1/2 hours or until the toothpick comes out clean after inserting in the middle part of the cake.
Step 15: Remove the pan from the oven and let it sit on a wire rack. Wrap with wax paper loosely.
Step 16: Place it inside an airtight container.
Step 17: Serve and enjoy!
