INGREDIENTS
2 tablespoons butter
12 jumbo shrimps, peeled and deveined
1 c. uncooked orzo pasta
1 teaspoon Old Bay Seasoning
½ c. good quality feta cheese crumbles
chopped parsley and lemon wedges to garnish
lemon juice to taste
How to make Easy Orzo with Shrimp and Feta
Step 1: Following the package directions, cook the pasta in a large pot of boiling water. Drain when done and rinse with cold water. Set aside.
Step 2: Using paper towels, pat the shrimps dry and toss with Old Bay Seasoning.
Step 3: In a large, non-stick skillet, melt 1 tablespoon butter over medium heat. Once the butter has melted, add the shrimps to the skillet and fry for about 1 to 2 minutes per side until just cooking. Set the shrimp aside when done.
Step 4: Add the rest of the 1 tbsp butter to the same skillet. Let it melt and wait until it just begins to brown before adding in the orzo and feta cheese. Stir well, then turn the heat off.
Step 5: On top, arrange the shrimps and drizzle with lemon juice. Serve garnished with some chopped parsley, lemon wedges, and some extra feta cheese. Enjoy!
