Easy One Skillet Pork Chops in Mushroom Gravy

This is an amazing one-skillet meal with super juicy pork chops and tons of delicious mushroom gravy. The big surprise is the gravy has no cream! But if you want to add cream you can, too. See the notes below. Either way, this dish is seriously great, budget-friendly, and family-approved!

Ingredients

1 tbsp olive oil

2 tbsp butter one to sear chops, one to brown mushrooms

6 pork chops

1 c. onion thin sliced

3/4 c. beef stock

3/4 c. chicken stock

1/4 c. flour

Salt and pepper to taste

1 lb. crimini mushrooms, sliced

How to make Easy One Skillet Pork Chops in Mushroom Gravy

Step 1: Lightly sprinkle the pork chops with salt and pepper.

Step 2: Add 1 tbsp each of oil and butter in a hot skillet over medium-high heat. Add the pork chops to the skillet and sear for about 2 to 3 minutes per side. Depending on the size of the skillet, you may have to sear the pork chops in two batches. When done, set the pork chops aside. Tent the chops to keep them warm.

Step 3: To the same skillet, saute the sliced mushrooms and onions for approximately 5 minutes or until lightly browned.

Step 4: In a measuring cup, whisk the beef and chicken stock. Add in the flour, stirring until the lumps are gone. Pour this into the mushroom and onion mixture. Let the mixture simmer for about 2 to 3 minutes until thickened.

Step 5: Adjust the heat to low-medium heat, then return the pork chops to the pan. Cook further until the internal temperature of the chops reached 145 degrees. This takes another 10 minutes.

Notes:

For the gravy, you can swap 1/4 cup of stock with heavy cream or half and half.

You can either stir the flour into the mushroom and onion mixture, then pour in the broth. Or whisk the flour with the broth. Do whatever works for you.
