This fantastic one-skillet pork chops has tons of delicious gravy with mushrooms and easily comes together in just thirty minutes!

2 tbsp butter one to sear chops, one to brown mushrooms
1 tbsp olive oil
6 pork chops
1 lb crimini mushrooms – sliced
1 c. onion thin sliced
3/4 c. chicken stock
3/4 c. beef stock
1/4 c. flour
Salt and pepper to taste
How to make Easy One Skillet Pork Chops in Mushroom Gravy
Step 1: Season the pork chops lightly with salt and pepper.
Step 2: Over medium-high heat, heat a large skillet.
Step 3: To the hot skillet, add a tbsp each of oil and butter.
Step 4: Place the pork chops into the hot pan and sear each side for about 2 to 3 minutes. If needed, sear the pork chops in batches.
Step 5: Set the seared pork chops aside and cover to keep them warm.
Step 6: To the same pan, add another tbsp butter, then adjust the heat to medium.
Step 7: Add in the sliced mushrooms and onions. Saute for about 5 minutes until lightly brown.
Step 8: In a measuring cup, combine the beef and chicken stock. Then, whisk in the flour the lumps are gone. Pour this into the mushroom/onion mixture and let it simmer for about 2 to 3 minutes until the sauce has thickened.
Step 9: Adjust the heat to low-medium before adding the chops back to the pan. Continue to cook for another 10 minutes, uncovered until the internal temperature of the pork chops reads 145 degrees.
Notes:
In place of the 1/4 cup of stock, use heavy cream or half and a half if you want to add cream to the gravy.
