This six ingredients mini eggplant pizza is so easy and quick to make. This is an amazing low-carb pizza ready in less than thirty minutes. Incredibly delicious I bet even your picky eaters would want more of this!

I have tons of favourites and go-to’s and this easy mini eggplant pizza recipe is one of them. I shared this with my mom, and she loved it so much, she bragged this to her friends!

INGREDIENTS
2 tablespoons Olive oil
1 1/2 c. Mozzarella cheese (shredded)
1/2 c. Marinara sauce
1 medium eggplant (1 pound; cut into uniform 1/2-inch thick slices)
1 teaspoon Italian seasoning
1 ounce Mini pepperoni slices
Sea salt
Black pepper
HOW TO MAKE LOW CARB MINI EGGPLANT PIZZA
Step 1: Prepare the oven. Preheat it to 450 degrees F or 232 degrees C. Using parchment paper, line a baking sheet.
Step 2: On the prepared baking sheet, arrange the slices of eggplant in a single layer. Spray or brush each side of the eggplant with olive oil, then sprinkle with sea salt and black pepper. Place in the preheated oven and bake the eggplant slices for approximately 15 minutes or until soft and golden.
Step 3: On each eggplant slice, spread around 2 tsp (9grams) of marinara sauce and sprinkle each with 2 tbsp (28grams) of shredded cheese. Lastly, top each slice with Italian seasoning and slices of pepperoni.
Step 4: Adjust the oven to broil, or the temperature to 500 degrees F or 260 degrees C. Place the baking sheet back in the oven and continue baking for additional 5 minutes or until the cheese has melted and turned slightly browned.
Step 5: Remove from the oven when done and serve right away. Enjoy!
