1 can Ranch Style beans
1 10-12 ounce bag tortilla chips, crushed
1 can Ro-tel tomatoes
1 small onion, chopped
2 cups shredded cheddar cheese, divided
1 package taco seasoning
1 can cream of chicken soup
1/2 cup water
sour cream and salsa for serving
HOW TO MAKE EASY MEXICAN CASSEROLE
Step 1: Ready the oven and preheat to 325 degrees.
Step 2: Place a skillet on the stove and turn the heat to medium. Add the meat and cook until the fat comes out and the color turns brown. Remove the fat.
Step 3: Add the onion, tomato, water, soup, taco seasoning, and beans. Stir until well-mixed.
Step 4: Turn the heat to medium-low and simmer the mixture until cooked.
Step 5: Apply cooking spray into a 9×13 casserole dish.
Step 6: Arrange the crushed tortilla chips to a layer on the bottom part of the dish. Next, arrange a layer of the meat mixture followed by half of the cheddar cheese. Repeat this process until you use all the ingredients.
Step 7: Cover the casserole dish with aluminum foil.
Step 8: Place in the oven and bake for 20 to 30 minutes. When it appears to be bubbly, you’re done!
Step 9: Remove from the oven and let it sit on a wire rack to cool for 5 to 10 minutes.
Step 10: Pour the salsa and sour cream on top. Serve and enjoy!
