EASY LOW-CARB GREEK CHICKEN BAKE

A great addition to your weekly menu rotation, this easy low-carb Greek Chicken bake is super delicious and packed with all the Greek flavours you love!

INGREDIENTS

4 very large boneless, skinless chicken breasts

2 teaspoons olive oil

2 teaspoons Greek seasoning

1/2 c. cherry tomato halves

1/2 c. chopped or sliced Kalamata olives (or use black olives if you prefer)

1/2 c. sliced Greek pepperoncini

3/4 c. crumbled Feta Cheese (use more or less)

fresh-ground black pepper, to taste

HOW TO MAKE EASY LOW-CARB GREEK CHICKEN BAKE

Step 1: Prepare the oven. Preheat it to 375 degrees F or 190 degrees C.

Step 2: Trim and remove any fatty or undesirable parts of four large chicken breasts. Coat the entire chicken with Greek Seasoning.

Step 3: In a frying pan, heat olive oil over medium-high heat. Once the oil is hot, cook one side of the chicken breasts for about 2 minutes until almost brown. Flip the chicken and cook the other side for a couple of minutes. Make sure not too overdone the chicken.

Step 4: Transfer the chicken to a cutting board to cool for a minute or two.

Step 5: In the meantime, ready the other ingredients. Drain and slice the olives, slice the tomatoes, deseed and slice the peperoncini, and crumble the feta.

Step 6: Once the chicken is cool enough to handle, cut them into about 3 to 4 lengthwise strips.

Step 7: With non-stick spray, grease an 8 x 13-inch or 9 x 12-inch casserole dish.

Step 8: In the prepared dish, arrange the chicken breasts crosswise.

Step 9: Over the chicken strips, add the tomatoes, olives, pepperoncini, and crumbled feta. Then, season with fresh-ground black pepper.

Step 10: Place the dish in the preheated oven and bake for about 25 minutes or until the chicken is hot and the cheese is melting. Using a meat thermometer, check the internal temperature of the chicken if it already reached 165 degrees F or 75 degrees C.

Step 11: Enjoy hot!
