This King Ranch Chicken Casserole is Tex-Mex comfort food that you can easily make in a snap! This casserole is incredibly creamy, cheesy, and delicious. Everyone loved it and this has been my family’s favorite rotation for as long as I can remember!
INGREDIENTS
1 small yellow onion, diced
4 tbsp unsalted butter
4 c. chicken, cooked and shredded
1 red bell pepper, seeded and diced
3 cloves garlic, minced
2 tbsp flour
1 c. chicken broth
1 tbsp chili powder
1 tsp cumin
Juice from one lime
1 (10 ounces) can of diced tomatoes with green chiles, drained
1 c. sour cream
1 jalapeno pepper, seeded and diced
10 ounces tortilla chips, roughly crushed
2 c. cheddar cheese, grated
2 c. pepper jack cheese, grated
Kosher salt and freshly ground black pepper, to taste
1/4 c. cilantro, chopped
How to make King Ranch Chicken Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees F. Using a nonstick spray, grease a 9 x 13-inch baking dish, and set aside.
Step 2: Melt the butter in a large skillet over medium heat. Then, add the onions, bell pepper, and jalapeno pepper. Cook for about 5 to 7 minutes or until soft and aromatic. Add the garlic and continue to cook for another minute.
Step 3: To the skillet, add flour, chili powder, and cumin. Stir and cook for a minute more. Adjust the heat to low and slowly whisk in the chicken broth and lime juice. Cook further until the mixture has thickened.
Step 4: Take the skillet off the heat and stir in the drained tomatoes, chilies, and sour cream. To taste, season with salt and pepper. To a large bowl, transfer everything.
Step 5: To the bowl, add the chicken and cilantro. Toss well and adjust the seasoning according to taste.
Step 6: Place the two kinds of cheese in another bowl and mix well.
Step 7: With 1/3 of the crushed tortilla chips, line the prepared baking dish. Top with half of the chicken mixture, followed by 1/3 of the cheese. Do the same layers once more and topped with another layer of chips and one more layer of cheese.
Step 8: Generously grease a sheet of aluminium foil with nonstick spray. Loosely tent the dish with it. Place in the preheated oven and bake for about 30 minutes. Remove the cover and continue baking for an additional 10 to 15 minutes until golden brown and bubbly.
Step 9: Remove from the oven when done and allow it to sit for about 10 minutes. Serve and enjoy!
