These are one of the best keto-friendly meals! I love pizza, but most of the time I am afraid that I’ve already consumed so many carbs than I should. So, these easy keto pizza bites are my favourite go-to! A bonus is you can use this recipe as a base recipe for the ultimate pizza! Simply add your favourite veggies such as bell pepper, black olives, mushrooms, etc.

3 large eggs, beaten
1 lb Italian sausage, cooked and drained
1/3 c. coconut flour
1 tsp minced garlic
1/2 tsp baking powder
1 tsp Italian seasoning
1 1/4 c. shredded mozzarella
4 oz. cream cheese softened
How to make Easy Keto Pizza Bites
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Mix the cooked sausage with cream cheese until completely blended. Then, add the rest of the ingredients and mix well until incorporated. Place in the fridge to chill for about 10 minutes to give the flour time to absorb the moisture.
Note: make sure to not skip the chilling of the dough or they will end up flat as they cook and not be round balls.
Step 3: Using a small cookie scoop, drop the balls onto a greased baking sheet. I recommend using silicone baking mats. Place in the preheated oven and bake for about 18 to 20 minutes or until the bites are golden brown.
Notes:
You can use 1 1/2 cups of chopped pepperoni to replace the Italian sausage.
In place of coconut flour, you can also use almond flour. Just note that the bites will not be as light and fluffy.
