I love beef in Wellington, but it is quite pricey. This recipe for easy ground beef Wellington is a budget-friendly version, inexpensive, and easier to make at home. Perfect for a special meal without breaking the bank.

3 tbsp butter
1 ½ lbs ground beef
2 eggs beaten
2 tbsp dried parsley fresh works best
1 tbsp cream (milk works fine)
4 cloves garlic minced
4 tbsp saltine crackers or bread crumbs, crushed
1 small onion chopped fine
8 oz. baby Bella mushrooms
½ c. red wine or grape juice
1 tsp salt
mozzarella cheese optional
1 tsp basil fresh works best
salt and pepper, to taste
2 sheets puff pastry (thaw according to the pkg)
How to make Ground Beef Wellington
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Combine the eggs, ground beef, saltine crackers or bread crumbs, dried parsley, salt, and cream until well mixed. Set aside.
Step 3: Melt the butter in a large saucepan. Once the butter has melted, add the minced onion and mushrooms to the pan and cook over medium-high heat until the onions are translucent and the mushrooms sweat.
Step 4: Adjust the heat to medium while adding the garlic, red wine, and basil to the pan.
Step 5: Then, adjust the heat back to high and continue to cook until the liquid has reduced. Take off the heat when done and let the mixture cool.
Step 6: In the meantime, lightly grease a baking pan or cookie sheet.
Step 7: Layout the pastry sheets on a lightly floured surface, then cut each sheet into 4 squares. On each square, spread the mushroom mixture and top with a thin layer of mozzarella cheese. Lastly, add half a cup of the meat mixture that has been shaped into flattened balls over the cheese.
Step 8: Over the meat, pull the corners up and pinch the edges to seal. On the prepared cookie sheet/baking dish, put the bundles seam-side down. On top, cut small slits and brush the tops with beaten egg or cream.
Step 9: Place in the preheated oven and bake for about 30 to 40 minutes or until golden brown and the meat is completely cooked.
Step 10: Remove from the oven when done and serve the Wellington right away with the brown gravy. Enjoy!
