This has been my family’s go-to weeknight meal. It’s super good and incredibly easy, and quick to throw together. For this recipe, you can also use spaghetti, linguine, or even angel hair pasta instead of dried spaghetti. The trick is using a good old-fashioned streaky bacon and keeping the bacon fats. It is where the magic happens!

¼ c. olive oil
10-12 strips thick-cut bacon
1 pound dried spaghetti
6 large garlic cloves
1 tbsp salt
freshly grated Parmesan cheese, garnish
chopped fresh parsley, garnish
How to make Easy Garlic Bacon Pasta
Step 1: Cook 1 pound dried spaghetti in a large pot of salted boiling water for less than a minute as stated in the packet. Drain the pasta, reserving 2 ½ cups pasta cooking water. Set aside.
Step 2: Into smaller pieces, dice around 10 to 12 bacon strips. To a frying pan, add 2 tbsp olive oil. Add the diced bacon and cook for about 4 to 5 minutes over medium-high heat until crispy.
Step 3: In the meantime, peel 6 garlic cloves and slice them thinly.
Step 4: Using a slotted spoon, take the crispy bacon from the pan, leaving the oil and bacon grease.
Step 5: Decrease the heat. Add the rest of the olive oil to the pan along with the sliced garlic. Keep stirring for about 2 minutes or until the garlic has softened. Now, add half a cup of the pasta cooking water and turn the heat back up.
Step 6: Allow the mixture to boil for a minute before adding the drained pasta. Next, add the other half cup of the pasta water and toss until coated.
Step 7: Add the cooked bacon and the collected juice once the garlic sauce has coated the pasta. Adjust the seasoning according to taste.
Step 8: To serve, garnish the pasta with some fresh parsley and grated Parmesan. Enjoy!
Notes:
I recommend using bacon with plenty of flavours and has a good amount of fat. I always use the good old-fashioned streaky bacon to make this recipe.
