Easy Fried Rice

I have always loved Chinese fried rice. I have tried so many variations, and this easy-fried rice is one of my top picks. Easily whip this up for a quick side dish. For a complete meal, you can add proteins to the fried rice such as pork or chicken if desired.

This easy fried rice is a very easy and quick recipe. This is also pretty versatile. This recipe calls for eggs, frozen peas, and carrots, along with simple pantry essentials. Make sure to use cold rice or leftover rice (I prefer brown rice since I like slightly sticky and chewy fried rice) for great results. This recipe is a no-fuss, just make sure to be patient and take time to saute the rice and the veggies for that classic “fried” flavour.

Ingredients

2 eggs, whisked

3 tablespoons butter, divided

1 c. frozen peas and carrots

1 small white onion, diced

3 cloves garlic, minced

3 green onions, thinly sliced

4 c. cooked and chilled brown rice

3-4 tablespoons soy sauce

1/2 teaspoon sesame oil

salt and pepper

How to make Easy Fried Rice

Step 1: In a large skillet, melt half tbsp butter over medium-high heat. Once the butter has melted, add the egg to the skillet and cook, stirring often, until scrambled. Set aside.

Step 2: To the pan, add another 1 tbsp butter. Once melted, add the carrots to the pan along with the onion, peas, and garlic, and generously season with salt and pepper. Cook for about 5 minutes, stirring often until the onion and carrots have softened.

Step 3: Adjust the heat to high and add the rest of the butter. Stir and quickly add the rice once the butter has melted along with the green onions and soy sauce. Stir well until combined.

Step 4: Keep stirring for 3 minutes more to fry to rice. Return the scrambled eggs to the pan and stir well. Then, stir in the sesame oil.

Step 5: Remove from the heat when done and serve the fried rice right away. Enjoy!
