HOW TO MAKE EASY CREAMY WHITE CHICKEN ENCHILADAS
Step 1: Prepare the oven. Preheat it to 350 degrees F. And using a nonstick cooking spray, grease a 9 x 13-inch baking dish.
Step 2: Combine the shredded chicken with one cup of shredded cheese, salt, pepper, and adobo seasoning in a medium-sized bowl.
Step 3: Into each flour tortillas, place the chicken mixture. Roll the tortillas, then place them into the prepared baking dish.
Step 4: Melt the butter in a medium saucepan. Add the flour after the butter has melted, whisking to cook, and thicken for approximately a minute. Pour in the chicken broth and whisk until smooth before adding in the sour cream and green chiles. Stir to combine, making sure not to let the mixture come to a boil. When done, remove the sauce from the heat and pour it over the enchiladas. Sprinkle the shredded cheese on top of the sauce.
Step 5: Place in the preheated oven and bake for about 20 to 25 minutes. If desired, you can set the oven to broil after baking for about a minute or so on high until the cheese has slightly browned and bubbly.
Notes:
To cook the chicken, you can either roast or boil them. To roast, drizzle the chicken with a little olive oil and season with salt and pepper. Cook the chicken for approximately 35 to 45 minutes.
If desired, you can use a store-bought rotisserie chicken. In my opinion, roasted and rotisserie chicken gives the most flavour.
Using two forks, shred the cooked chicken. Alternately, you can use a stand mixer with a paddle attachment. Simply place the chicken in a mixing bowl and shred for about a minute or so.
