EASY CRANBERRY PISTACHIO CHEESE LOG

PREP TIME: 10 MINS | SERVINGS: 16

This is another amazing appetizer you should not miss! Sweet, creamy, and tangy cranberry pistachio cheese log that you can make in under ten minutes using a few simple ingredients. You can even whip this up a couple of days in advance to save time.

INGREDIENTS

CRANBERRY PISTACHIO COATING:

1 c. shelled roasted, salted pistachios

1 1/4 c. fresh cranberries

CHEESE LOG:

4 ounces cream cheese, softened

7-8 ounces goat cheese log or tub

2 tbsp honey

1/2 c. Cranberry Pistachio Coating mixture (in directions)

1/8 tsp pepper

1/4 teaspoon EACH ground ginger, ground cinnamon, salt, dried thyme, dried rosemary

GARNISH:

Honey

HOW TO MAKE EASY CRANBERRY PISTACHIO CHEESE LOG

Step 1: Into a food processor, add the cranberries and pistachios. Pulse into small pieces but do not over-process. Set aside half a cup and add the rest to a bowl with the rest of the cheese log ingredients. Mix well.

Step 2: To a large piece of plastic wrap, add the cheese mixture and shape it into a log. Wrap the log in a plastic wrap and freeze for 20 to 30 minutes.

Step 3: With a large piece of parchment paper, line the counter. Add and spread the coating ingredients in a single later square. Make sure that it is a bit larger than the length of the cheese log. To the edges of the coating roll, add and roll the cheese log, making sure the log is evenly coated. Press the coating into the cheese to ensure it sticks. You can store the cheese log in the fridge or serve it right away.

Step 4: Take the cheese log from the fridge at least 15 minutes before serving to soften it. Generously drizzle with honey and serve with crackers. Enjoy!

NOTE:

Feel free to make this cheese log a couple of days ahead. Just tightly wrap it in plastic wrap and store it in the fridge. When ready to serve, remove it from the fridge about 15 minutes before serving to soften it. Then, generously drizzle with honey and serve!
