EASY CARBONARA SAUCE (NO CREAM)

This easy Italian dish requires only eggs and Parmesan cheese (no cream!) to make. An original Italian recipe that you can make whenever you want at the comfort of your home. Perfect not only for the whole family but with a glass of wine for date nights. Same creaminess without the guilt.

Ingredients

100 grams (3.5 ounces) pancetta finely chopped

80 grams (½ c) Parmesan cheese

4 Eggs large

1 pound spaghetti

2 garlic cloves peeled and crushed

1 tablespoon butter optional

salt

pepper

HOW TO MAKE EASY CARBONARA SAUCE (NO CREAM)

Step 1: In a large pot with salted water, cook the spaghetti following the package directions.

Step 2: Meanwhile, in a large pan, cook the chopped pancetta or bacon with 1 or 2 whole garlic and a tbsp butter. Once the fat is rendered, remove the garlic. Or discard 1 to 2 tbsp fat if using bacon.

Step 3: Mix a whole egg, 3 egg yolks, and freshly grated Parmesan cheese in a small bowl until mixed.

Step 4: Drain the cooked pasta and reserve half a cup of pasta water.

Step 5: Immediately add the pasta into the pan with the pancetta followed by the reserved pasta water. Stir to coat and remove from the heat.

Step 6: Use a pair of tongs to toss the spaghetti with the egg and Parmesan mixture. Do it quickly so the eggs will not curdle.

Step 7: Season according to taste. Add the remaining pasta water to make the dish saucier.

Note:

If using bacon, omit the butter.
