This Baked Shrimp Toast is my new best friend. Easy and quick to throw together. Crispy bread with rich and creamy shrimp mixture on top. This could be your newfound favourite appetizer.

6 ounces shrimps, peeled and deveined
3 tbsp mayonnaise
3 tbsp butter, melted
1 1/2 tsp grated garlic
1 1/2 tbsp thinly sliced scallions (about 2 stalks of scallions)
black pepper
baguette or ciabatta
basil, chiffonade
How to make Easy Baked Shrimp Toast
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Into small pieces, chop the shrimps or process in a food processor. If using a food processor, make sure not to process the shrimp into a paste.
Step 3: Combine the shrimps with mayonnaise, melted butter, grated garlic, scallions, and a generous amount of black pepper.
Step 4: In half, slice the ciabatta or baguette horizontally. Or slice the baguette into thin (not thicker than an inch) pieces.
Step 5: On the cut side of the bread, spread the shrimp mixture. Bake in the preheated oven for about 15 to 18 minutes until the bread is crispy and the top is golden.
Step 6: Before serving, sprinkle the toast with fresh basil. Enjoy immediately.
Notes:
This recipe is enough to make 10 to 15 slices of baguette but still depends on how large the slices are. The shrimp mixture can board one half of a 6 x 8-inch ciabatta bread.
If desired, you can replace butter with cheese. Or keep the butter and just sprinkle the cheese on top. Broil the shrimp to melt the cheese. You can try Parmesan, mozzarella, or other kinds of cheese.
