Ingredients
4 large boneless skinless chicken breasts
2 c. flour
4 teaspoons salt
4 teaspoons black pepper
3 tablespoons ground ginger
1 tablespoon freshly ground nutmeg
2 teaspoons ground thyme
2 teaspoons ground sage
1 teaspoon cayenne pepper
2 tablespoons paprika
4 Eggs
8 tablespoons water
2 tablespoons olive oil
3-4 cloves minced garlic
1 c. honey
1/4 c. soy sauce, low sodium soy sauce is best
1 teaspoon ground black pepper
canola oil for frying
How to make Double Crunch Honey Garlic Chicken Breasts
Step 1: Between 2 sheets of plastic wrap, place the chicken breasts. Pound with a meat mallet to half-inch thickness. Or simply slice the breasts. On a cutting board, place them flat and with a very sharp knife, slice the breasts horizontally into haves.
Step 2: Sift the flour, salt, black pepper, ground ginger, nutmeg, thyme, sage paprika, and cayenne pepper. This flour and spice dredge mix is good enough for two batches.
Step 3: Whisk the eggs and water to make an egg wash.
Step 4: With salt and pepper, season the chicken breasts. Dip each in the flour and spice mixture, then into the egg wash, and back into the flour mix. Make sure to press the meat into the mix.
To cook the chicken:
Step 1: Add about half an inch of canola oil to cover the bottom of a skillet. Once the oil is hot, add the breasts to the skillet and cook for about 4 to 5 minutes on each side over medium heat until brown and crispy.
Step 2: Remove the chicken from the skillet and onto a wire rack for a few minutes before dipping them into the Honey Garlic Sauce. Enjoy with noodles and rice.
To make the Honey Garlic Sauce:
Step 1: Heat 2 tbsp olive oil in a medium saucepan. Add the minced garlic and cook until soft over medium heat, making sure that the garlic won’t turn brown. Then, add in the honey, soy sauce, and black pepper.
Step 2: Let everything simmer for about 5 to 10 minutes. Take out of the heat and cool for a couple of minutes.
Oven-baked Version:
Step 1: Do the same steps above, all the same, heating a baking sheet in a 425 degrees F oven while preparing the chicken.
Step 2: As instructed, dip and coat the chicken pieces. Then, lay the cooked pieces flat on a lightly floured cutting board while getting everything ready.
Step 3: Take the hot pan from the oven once the pieces are all ready, then lightly oil the bottom of the baking pan using canola oil or other vegetable oil. Make sure to use just enough oil to coat the bottom of the pan.
Step 4: Transfer the pieces of chicken to the prepared pan as quickly as possible, making sure not to overcrowd the pan nor touch each other so leave about an inch of space between each piece.
To cook the chicken:
Step 1: With vegetable oil, lightly spray the tops of the pieces of chicken.
Step 2: Keep the heat at 425 degrees F and put the baking sheet in the oven on the second-lowest rack.
Step 3: Bake the chicken for about 15 minutes.
Step 4: Remove the pan from the oven, flip the chicken pieces, and bake for 10 to 15 minutes more or until brown and crispy.
Step 5: In the sauce, dip the baked chicken pieces and enjoy them immediately.
